This is a bit of an odd sounding thing to have on toast but it is sooo tasty.

Start toasting your bread. (I prefer brown bread for toasting.)

Slice up a tomato as thin as you possibly can. I mean less than 2mm. You need a very sharp knife to do this, or the slices come out too thick, or the tomato gets crushed. The slices are so thin, you probably wont need a whole tomato. (Maybe thin slices warm from the toast, whereas thicker slices would stay cold or would overpower the other flavours? I dont know.)

Butter your toast, then cover it in tomato slices. Dont pile them up, you want a single 1-2mm thick layer of tomato covering your toast.

Pinch of salt, quick grating of pepper.

Eat while hot.

Enjoy!

Anyone else have any good ideas for toast?

its a lazy version, for proper toast pizza you need layers of meat , peppers and extra cheese :)

Rather than toasting the bread, butter it first, sprinkle with herbs, put on whatever toppings you're using plus a bit of grated cheese and bung in the oven (or under grill) for a bit.

Pre-buttering the bread makes it go almost like fried bread. And the herbs soak into the butter.

Eat with BBQ sauce to finish.
