Just booked a flight to Singapore from 18th Dec - 8th Jan to see my parents over Christmas/New year.
Plan on a flight to Thailand (few days stopover) whilst over there as I have never been to anywhere remotely like it.
Can anyone recommend places to see / things to do in Singapore?

There's an amazing array of food, almost every type you can think of. Some of the shopping centres have over 100 food places, all selling something different.

Find a restaurant that does cat!!
Went to Singapore a few weeks ago and had a great time living the ex-pat life (play football, sit by the pool, go out every night in very comfortable temperatures). That being said, the best bit about Singapore is that it sits within a couple of hours and cheap flights of Thailand, Malaysia, Indonesia, Borneo, Hong Kong etc.
The list of things to do in Singapore itself is very short - Singapore Zoo basically.

Much like my Mother told me Tim, parents and break from work being main reason for the Singers destination (free accomadation etc). Not sure where in Thailand to visit though :/

Aye - The best bits about Singapore is its proximity to everywhere else, and the food. The food is seemingly superb wherever you go.
But other than Boat Quay and the Night Safari at the zoo I'd be struggling to recommend anything else to do.
We went on to Bali after Singapore.
