Spicy mexican chicken stir fry

1 Bag white rice
1 Bag Brown rice
1 knorr mexican fajita stir in sauce.
5 chicken breasts
1 bag stir fry stuff (beansprouts with a few other things in
2 onions
Half a Red Pepper
Half a Green Pepper
Half a Yellow Pepper


1) Make rice according to packet
2) Stick chicken in wok with knorr sauce to marinate and mix together (ie not on cooker)
3) 10 mins before both rices finish stick chicken on cooker for 10 mins stirring occasionally.
4)Drain rice and mix together. put back on hob on low heat
5) throw all veg and bag of stir fry stuff in with chicken and cook for a further 5 - 10 mins.
6) Stick rice on a plate and pile stirfry on top
7) enjoy

I got the idea for this after seeing various things in my cupboard that i had just bought and thought. "damn that sounds tasty" and it is! its so very very nice go make!

sounds quick and easy enough

how did u do the chicken ? pre cook it slightly first or dice it so it cooked quicker ?

Normally you would dice it for stir fries (i think), or for things like fahitas it would be strips.

ah yes. dont cook the chicken before and i did it in strips


it has however left a very oniony taste the next day

ten mins cooking didnt seem long enough though

i always pre cook the chicken then add to stir frys

When you say pre-cooking do you mean as a whole chix breast?

Only the point of dicing it first is so the seasoning and flavours marinate the chix thoroughly as its cooking, rather than just coating the outside

as a useless cook i precook the chicken in spices then leave to cool


when its reheated it has to be hot in center before eating as im worried about food poisioning ( and if you ever ate here you would realise how high that risk is )

yes you dont make all the rice you tard. you make it according to the bag

and D-Void you are a failure at cooking I however am great. And reheating chicken is like going out to a scottish stag night.....completely stripping......and screaming "COME AND GET SOME" when you dont want to have sex.

tis why i was one of the ppl who asked for this forum , i know im useless at cooking

so ten mins is definately enough when cooking diced chicken ?

if you have it hot enough then yeh. it al ldepends on amount you bung in. i ended up doing it for about 15 mins though because of all veg and stuff chucked in.

10 mins should be fine, so long as each chunk of diced chicken is no thicker than an oxo cube ( or your thumb) then it will do in 10 mins np.

edit - on its own witout loads of other stuff in the wok, you should add veg & stuff once you are happy the chicken is done, or very nearly done.
