Source for recommended reading lists.

There are a few subjects I'd like to learn to a degree level but obviously without doing the degree itself or I'd be in education until I was 40

Is there anywhere where I can find out the best books for certain subjects?

Specifically Philosophy, Psychology, Ancient History, English History, Anatomy + Human Biology, Economics, Law, Sociology, and Maths.

Difficult to know without knowing more details of the role, but the definitive corporate finance text (by professionals as well as students) is 'Principles of Corporate Finance' by Brealey and Myers.

i work in a securitisation role, need to get more of an understanding of the balance sheet, risk, capital markets and accountacy - basically how the whole of the banks treasury fits together and why they need me to do what i do. trying to get my head around it a bit more so i can say "i need this training... or i need this qualification" etc but at the moment i am trying to avoid saying "i need to know everything"

I'd just ask work to put you through the CFA and be done with it. Brealey and Myers is worth having as a reference though.
